In this hands-on class, you’ll work with traditional durum wheat (semolina) doughs, the backbone of pasta-making across Southern Italy. You’ll learn how to transform this simple, water-based dough into iconic regional shapes such as gnocchetti sardi, strascinati, and orecchiette—each designed to enhance rustic, sauce-forward dishes.
Beyond technique, we explore the cultural and agricultural foundations of Southern Italian pasta: the central role of hard wheat, the influence of climate and terrain, and the resourceful foodways that shaped these enduring forms.
The evening is relaxed, engaging, and educational—ideal for a date night, social outing, or culinary deep dive. You’ll leave with a strong technical foundation in semolina pasta and the confidence to recreate these shapes at home.
