May brings longer evenings, brighter flavors, and a renewed sense of connection. Sip and Sushi returns with a late spring edition that continues our evolution from omakase into a refined kaiseki inspired dining journey.

Omakase means “I leave it up to you,” placing trust fully in the hands of the chef. Kaiseki deepens that experience through a seasonal, thoughtfully paced progression rooted in harmony, balance, and artistry. Each course is designed to reflect the moment in time, highlighting ingredients at their peak and presenting them with intention and elegance.

For this May edition, the chefs at Sushi Confidential present an 8 to 10 course omakase to kaiseki progression showcasing pristine seafood, premium meats, and vibrant late spring produce. This is not just raw fish. Expect a dynamic flow of delicate sashimi, composed seasonal plates, warm preparations, and signature creations that blend Japanese technique with California creativity.

Each course will be paired with exceptional California wines from a featured winery to be announced soon. As always, every pairing is selected to complement the flavors of the season and elevate the full sensory experience.
