Our next installment of The Outpost Dinner Series features a thoughtfully curated dinner with drink pairings, highlighting the rich culinary traditions of Northern Spain — from coastal influences to rustic countryside classics.

First Course – Pintxos Trio
Crispy Boursin stuffed pancetta wrapped dates // The Gilda with guindilla peppers, boquerones & Castelvetrano olives // Manchego, romesco aioli & cured salchichón with focaccia
Paired with… Zurracapote (Basque Sangria) – a warm season sangria featuring Campo Viejo Tempranillo, lemons, peaches, cinnamon, and soda

Second Course – Ensalada de Pulpo
Tender red wine braised Spanish octopus tossed with roasted tomatoes, peppadews, white beans, arugula & fresh herbs, finished with Meyer lemon, extra-virgin olive oil, crispy garlic & N’duja garlic toast
Paired with… Baskoli Txakoli White Wine – a crisp white blend from the Txakolina region of Basque Country

Third Course – Poulette Basquaise
Chicken braised in a traditional Basque piperade sauce with sweet peppers, tomatoes, onions & Espelette pepper, served with saffron rice
Paired with… Baskoli Txakoli Rosé – a refreshing rosé from the Txakolina region

Final Course – Lemon & Ginger Tarta de Queso Vasca
Creamy lemon & ginger Basque-style cheesecake with a caramelized top & raspberry compote
Paired with… Basque Negroni – Breckenridge Gin, Campari, sweet vermouth, and aromatic bitters
