Valeri Lucks is the co-founder and Chief Executive Pie Officer of Honeypie Cafe + Bakeshop in Milwaukee, WI.  Armed with her mother's pie crust recipe, she has been baking pies since she was knee-high to a grasshopper.  Pies are the darlings of her locally-focused restaurants Honeypie, Comet, SmallPie and Palomino as well as her mail-order pie program, PieGram.  Valeri's recipes and pies have been featured inFood and Winemagazine,Travel and Leisuremagazine,Time Out Chicago,Time Out USA,Milwaukee Magazine,OnMilwaukee.com,Milwaukee Journal Sentinal, Wisconsin Public Radio and the Discovery Channel'sUnited States of Bacon.  When she is not baking pies she can be found sampling bourbon with her husband and playing records for her dog.

Learn the tips and tricks to making your own handmade, from-scratch pies and other baked goodies in these hands-on classes with the founder of Honeypie Cafe and Bakeshop.

In this pie lesson led by Honeypie's founder and Chief Executive Pie Officer, Valeri Lucks, we will we learn a shortening-based pastry crust and the how-to's of "blind baking" for the most crisp and flaky crust that holds creamy, dreamy pie fillings. While we learn how to make our own chocolate silk filling while we discuss the history of"French Silk" pie, it's variations and which French Silk inspired Valeri's life-long love of pie. You will go home with one completed 9" pie to share or to keep all to yourself. Our classes are held at the Honeypie Bakeshop kitchen inside our sister cafe <a href="http://www.palominobar.com" title="http://www.palominobar.com" target="_blank" data-msys-clicktrack="0" rel="nofollow noopener noreferrer">Palomino</a>, this hands-on class will guide you through a variety of different aspects of baking and give you a peek into the life of our bakeshop. Class does have us standing most of the time and working at a table in a professional kitchen. Should you need a seated option for class, please contact us and we can make arrangements.Ticket for class includes a tap beer, well cocktail, glass of wine, or NA beverage of your choice - all of your ingredients, a printed recipe with instructions, and your finished treats!Classes are approximately 2.5-3 hours and are limited to 12 people. The Palomino kitchen and bar is open before class and during class serving drinks and our full dinner menu. (Please note, we often have long wait lists for our pie classes. Tickets to class are non-refundable if you cancel without more than 72 hours notice. If you need to cancel within 72 hours of class, you are welcome to email us, and we will offer your spot to a person on the waiting list. If it is taken by someone waiting, we will refund your ticket. You are also welcome to give your ticket to a friend and they can attend in your place.)
