Norah is the founder of ‘Handcrafted Ferments by Norah’ focusing on fermentation education. Whether in private in-home or virtual Zoom classes, she imparts the science and craft of various ferments. Currently, Norah teaches workshops on sauerkraut, kimchi, tempeh, kombucha, yogurt (dairy & non-dairy), and short-term koji ferments (shio koji, amazake & shiro miso). Born and raised in Singapore, Norah started fermenting tempeh as a way of recreating fond food memories from her home country. She has since entered a fermentation rabbit hole and is constantly expanding her repertoire. Her academic training in the social sciences shapes her scientifically-informed approach to understanding the principles of fermentation. Handcrafted Ferments by Norah

This DIY online workshop will equip you with the confidence and foundational knowledge to make your own short-term koji ferments at home.

Learn the entire fermentation process of handcrafting THREE different koji ferments in your own home! You only require pre-cultured rice koji, soybeans, cooked rice, water, and sea salt as your ingredients. This is a live workshop that doesn't just show you HOW to make these ferments (the craft) but also the WHY (the science) behind their different applications. LEARN: I'll explain the science of koji and the process of fermentation unique to this Japanese tradition. You will know what to look out for in subsequent batches of shio koji, amazake, and shiro miso and strategies for successful outcomes.DEMO: I'll demonstrate the different stages of the making shio koji, sweet amazake, and shiro miso. The first two take just minutes to put together while shiro miso requires more hands-on work but it'll be small-batch and very manageable for beginners to koji. DO IT TOGETHER: Follow along if you have prepared your ingredients accordingly. Each participant will receive a full instructional handout describing the ingredients and steps within 24 hours after registration. You'll also be invited to join my private Facebook group specially for workshop guests and receive follow-up support for your koji ferments made during or anytime after this workshop.
