About winemaker Taylor Boydstun and T. Berkley WinesAs the owner and winemaker of T. Berkley Wines, Taylor Boydstun puts his years of experience across all aspects of the winemaking industry to use. Harnessing the often split tasks of grape growing and winemaking, equally at home in the vineyard or the cellar, he brings a true European sensibility to his craft. Fun fact: Taylor is originally from Illinois!About wine educator James Hill IIIJames Hill III is a CPA by day, but wine educator by night! His quest to learn more about viticulture and the process of winemaking prompted him to transition from wine enthusiast to wine professional, most recently passing the Wine &amp; Spirit Education Trust (WSET) Level 2 Wine exam with distinction!About the wine 2017 Ophelia Cabernet Franc, Sonoma CountyA classic example of Cabernet Franc, this wine comes from 20+ year old vines from two distinct vineyards in Sonoma County. Handpicked, sorted, and micro-fermented, the resulting wine has explosive violet and red plum aromatics. After 22 months of barrel aging in French Oak barrels (no more than 30% new), the wine showcases soft, chocolate-like tannins with just a touch of varietal pepper on the finish. ALC 13.7%, pH 3.75, TA 6.5 g/L2018 Norgard Farms Chenin Blanc, Mendocino CountyThis wine comes exclusively from Tim Norgard’s Sterling Ranch just outside of Ukiah in Mendocino County. Older vines planted in 1980 on the now little used AXR1 rootstock still thrive there in the Mendocino County soils. The grapes were picked at lower brix, crushed and left on skins for a day, pressed, and fermented in a mix of French Oak, stainless-steel barrels, and concrete egg. Aged on lees 11 months, the wine has vibrant acidity and excellent phenolic structure, with notes of honeycomb, lemon curd, and jasmine. ALC 12.9%, pH 3.32, TA 6.2 g/L **You must be 21+ to purchase and participate. Must have someone 21+ at delivery site to receive and sign for wine.Paid for by DuPage Township Freedom First Slate.
