Calling all chocolate lovers! Join us at Under-Study for a hands-on candy bar workshop led by Executive Pastry Chef Frank Vollkommer—a Certified Master Pastry Chef and true wizard with all things sweet.

You’ll learn how to temper chocolate like a pro, choose from an array of artisanal fillings, and decorate your dream bar with flair. It’s part technique, part creativity, and all delicious.

To start things off, enjoy a welcome glass of wine from a celebrated Napa Valley winery as you settle into our Teaching Kitchen.

Led by Michelin-starred Chef Philip Tessier, the Teaching Kitchen at Under-Study is a dynamic space where culinary mastery meets hands-on discovery. Designed as both a workshop and a stage, the kitchen hosts an evolving calendar of immersive classes, chef-led demos, and collaborative events that welcome guests behind-the-scenes of great cooking.

From foundational techniques to seasonal workshops and avant-garde experimentation, each experience is rooted in the values of precision, creativity, and respect for ingredients. Chef Tessier is joined by a rotating cast of guest chefs, artisans, and winemakers, creating opportunities for dialogue, inspiration, and shared learning.
