No-Shows: Please cancel if you are unable to attend or you will be marked as a ‘no show’. After five no-show’s without notification, access to further classes will be paused for 30 days. Cancellations: Cancellations made more than 24 hours before the scheduled class will be refunded the class fee and applicable taxes, no refund can be issued on Eventbrite fees. Cancellations made within 24 hours of the class are non-refundable.


Leek Cheese Tart

Makes 1 9” Tart


2 tbsp butter or olive oil

3 leeks, trimmed, washed well, dried, and slice into ½” half circles

kosher salt, freshly ground pepper, and red pepper flakes

1 cup / 8 oz softened chèvre (fresh goats milk cheese) can be substituted with boursin, fresh sheep’s milk cheese, feta, brie, blue, teleggio, or other semi soft or crumbly cheeses

½ cup crème fraiche, sour cream, or whole milk ricotta

¼ cup heavy cream or half and half

2 eggs, whisked

please note optional additions:

1 garlic clove, minced or grated

1 - 2 tbsp fresh thyme leaves, chopped

½ lemon, for zest

1 9” blind baked tart shell


1. Preheat oven to 350F.

2. Place a wide skillet over medium heat and add butter or oil. Add leeks and season with salt, pepper, and red pepper flakes. Cook until softened and aromatic, about 5 – 7 minutes, stirring occasionally. Stir in any optional ingredients for 30 – 60 seconds of cooking. Remove from heat; taste and adjust seasoning. Transfer leeks to plate and place in refrigerator or freezer for a few minutes to cool.

3. In a small mixing bowl, mash chevre until softened and easy to mix. Add crème fraiche, heavy cream, and whisked eggs; season with salt, pepper, and red pepper flakes. Stir until well combined, then fold in leeks.

4. Place tart shell (in its pan) over a baking tray. Transfer leek and cheese mixture to tart shell and spread evenly. Place tart and baking tray in preheated oven. Cook until 30 – 40 minutes until just set in center. Allow to cool for at least 10 minutes before slicing.
