Join us at Escoffier for an unforgettable cooking adventure through the vibrant world of Spanish cuisine! Immerse yourself in the rich history and culture behind each dish, as we explore the diverse regions of Spain through their culinary traditions. From the savory delights of tapas to the bold flavors of paella, every bite tells a story waiting to be unraveled. This experience promises to ignite your passion for cooking and leave you with the skills to recreate these incredible flavors in your own kitchen.
This engaging class will occur on Tuesdays and Wednesdays for two consecutive weeks in November. The class will begin on the 19th and 20th and then culminate on the 26th and 27th. Registration includes all four sessions; individual sessions cannot be accommodated.
Check-in is 15 minutes before the event on day one. We will start promptly at the scheduled event time.
Each class will take place from 5 pm to 8 pm.

Tuesday, August 19th: Spanish Cuisine day 1
Techniques Used: Roasting, searing, steaming, slicing
Menu:
- Roasted Seabass and Potatoes- whole roasted fish seasoned with garlic, lemons, and saffron.
- Garlic Shrimp- Shrimp seared in olive oil and seasoned with garlic, chile flake, and lemon.
- White Beans with Clams- Cooked with wine, parsley, and garlic.
- Creamy Rice with Artichokes, Fava Beans, and Peas- Arborio rice cooked with onions and veggies
Wednesday, August 20th: Spanish Cuisine Day 2
Techniques Used: Searing, simmering, baking
Menu:
- Chicken and Shrimp with Almond and Chocolate Sauce- Chicken simmered in a fragrant sauce
- Meatballs in Almond Sauce- Meatballs in a sauce of ground almonds, lemon, garlic, and saffron
- Potatoes with Chorizo- Potatoes simmered with chorizo and tomatoes
- Pastry Rolls Filled with Walnuts-Walnut filling rolled into a tasty pastry
Tuesday, August 26th: Spanish Cuisine Day 3
Techniques Used: Roasting, frying, boiling, baking
Menu
- Duck with Pears- Roasted duck served with wine-poached pears and a tomato and almond sauce
- Ham Croquettes- crispy fried dough balls with ham
- Wrinkled Potatoes with Red and Green Sauce- Salt-cooked potatoes with two sauces
- Puff Pastry Filled with Almond Custard-
Wednesday, Augsust 27th: Spanish Cuisine Day 4
Techniques Used: Paella, bread work, emulsifying, poaching,
Menu
- Seafood Paella- Spain's famous rice dish cooked with seafood
- Onion Coca- Flatbread topped with onions, olives, and anchovies
- Garlic Mayonnaise- A popular Spanish sauce
- Red Wine Poached Pears with Whipped Cream- Pears cooked until soft in red wine, served with whipped cream.

What is the cancellation policy?
Event registrations can be refunded through Eventbrite up to 7 days prior to the event date. Event registrations are non-refundable less than 7 days prior to the event. Missed events may not be made up.
The school reserves the right to cancel any event not meeting sign up standards and to change recipes based on product availability.
*It is extremely rare for an event to be canceled due to weather.
Is there an age requirement?
Participants under the age of 18 may attend our events when they register and attend the event with a parent or guardian.
Is there a dress code?
This is a hands-on cooking event. Please wear comfortable clothes and closed-toed shoes. For safety reasons, please do not wear shorts, skirts or sandals. If you have long hair, please pull it back during the event.
