Spirits: Distiller-Led Winter Experience

While the vines rest above, our caves and stills come to life with Spirits in the Caves – a small-group, distiller-led experience designed for curious beginners and spirits fans alike.

In this intimate 60–90 minute session, held in our private room, our distiller will walk you through how spirits are made here at Fence Stile, from mash to barrel:

• How we start with molasses and fermentation to build flavor (rum)
• How the still turns a low-alcohol wash into concentrated spirit
• What heads, hearts, and tails are – and how careful cuts shape the final rum
• How barrel aging and blending add color, texture, and depth
• How all of that shows up in your glass

Along the way, you’ll enjoy guided tastings:
