Struggling with shaping your bread dough? This advanced shaping class is designed to help you get some supervised practice and an opportunity to ask questions with your hands in the dough. You will get to try several different shaping techniques (including baguettes) as well as storage basket options and helpful tools. We will discuss the importance of pre-shaping, bench rest, proper surface flouring, and sealing the bottom seam. You will also gain a better understanding of the final proofing stage. Shaping is an art, so this will be a change to make the process your own! You will take home a loaf of dough (that you shape in class) to bake at home the next day.
Want to get creative with your scoring technique? Baking is an art form, after all! You will get to choose from a variety of patterns (or create your own original masterpiece!). We will be baking the loaves that we score in class, so we can see the results of your handiwork in real time. Yes, this means you'll be able to take home your freshly baked loaf to enjoy! Don't forget to take photos before you cut into your beautiful loaf! You will also take home a retractable lame for more scoring at home.
