You’re at the farmer’s market, the grocery store or a local pick-your-own spot. You end up with far too much of whatever’s in season—rhubarb, blueberries, plums, cherries, strawberries, peaches—and realize you can’t possibly eat it all before it starts to turn. What to do? Turn it into jam, of course. But if you’ve ever given yourself gray hairs trying to find a great jam recipe that combines the particular fruits you have on hand, not to mention your most-loved spices, your favorite booze or that funky salt you’ve been wanting to experiment with, you’re not alone. That’s why we want to teach you to make great jams without a recipe—because sometimes, having no recipe means that you have limitless recipes.
Join guest teacher Heidi Skoog, creator of the beloved Minnesota-based brand Serious Jam, for a special two-hour livestream workshop where you’ll learn how to turn the seasonal produce of your particular corner of the world into completely unique jams. You’ll learn which tools are a must for the home jam-maker and which fancy gadgets you can skip. With your equipment and set-up ready to go, we’ll dive into the ratios that guide all of Heidi’s jams, meaning she can create successful fruit preserves without cracking open a cookbook. You’ll get comfortable with the relationship between sugar, acid, pectin and fruit, then come to understand how and when to introduce other flavors like aromatics, spices, alcohol, edible flowers and more. Heidi will show you how to guarantee a perfectly set jam every time, then share some of her favorite unexpected ways to serve and cook with preserves.
About Heidi: After nearly two decades as an award-winning florist, Heidi swapped blooms for an apron to pursue her passion for food. A self-taught jam-maker, Heidi combines traditional methods and a flair for experimenting with flavor combinations and unusual ingredients. The result is a well-balanced, vibrant preserve that has a lot of love and story in every jar. Unexpected flavor combinations, such as Salted Strawberry Jam, Chai Spiced Pear Butter, and Blood Orange Whiskey Marmalade have put Serious Jam on the culinary map. In addition to being serious about jam, Heidi is equally committed to teaching others to preserve the harvest, using food and herbs to heal, and testing her theories of kitchen-witchery on her super swell husband Kern and their eager friends. Heidi and Kern can often be found slinging jam at farmer’s markets together. They live in Scandia, MN on a hobby farm.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
