Stop right there: if you were about to pack up your Instant Pot—or comparable pressure cooker—along with the winter jackets, then you were going to make a big mistake. When the Milk Street recipe developers took on the task of writing an entire cookbook about the Instant Pot, what we discovered was this: our favorite way to use this humble kitchen tool is to take the heat out of summer cooking. Join Milk Street’s April Dodd, who has a particular passion for the kitchen’s least-appreciated appliances, for a small group workshop where you’ll learn to make two showstopping dishes that nobody will believe you made in an Instant Pot. In addition to looking and tasting great, these two dishes teach you advanced lessons about confident pressure cooker usage. You’ll learn why we use the Instant Pot’s raised rack to ensure even cooking of a tender, perfectly cooked pork loin that gets dressed with a sweet-sour agrodolce sauce and finished with our favorite gremolata variation. You’ll see just how little liquid—very little, it turns out—is required to perfectly cook tender chicken thighs and creamy potatoes. In both recipes, we’ll practice strategic orders of operations to keep your time in the kitchen on beautiful summer evenings to a minimum. And because the best meals—the ones that feel restaurant-worthy—always have a sauce, we’ll cover two different techniques to produce glossy, elegant sauces without getting any additional dishes dirty.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
