Ever wonder what it takes to break down a chicken like a pro? In this hands-on butchery class, you’ll learn to:
- Break down a whole chicken into 8 pieces (the classic “8-way” cut)
- Spatchcock a chicken for even roasting and grilling
- Properly and safely handle raw chicken in the kitchen
- Truss a chicken for perfect roasting results
- Build essential fine knife skills every home cook (and professional butcher) needs
- Understand the story behind chicken: how it’s raised and why it’s the #1 meat in the country
- Discover what makes Savenor’s Giannone Chickens so special, from their humane raising practices to their exceptional flavor and texture
Fun fact: Breaking down a chicken is one of the most common interview tests for aspiring butchers. It’s a critical skill!
