Pastry Arts Academy is thrilled to present a class by an extraordinary baker Peter Yuen!

Chef Peter Yuen is an award winning pastry chef who began his career working part-time at his family's bakery. He laer trained in Hong Kong in the art of Classical Baking as an apprentice to several legendary Chinese master bakers. In 2000 he graduated from The French Pastry School, a world-renowned pastry school loacted in Chicago. Afterward, he worked as a pastry chef at the Frehnch Mill Bakery, later he was recruited to work at the Four Seasons Chicago. In time, with a growing interest in bread baking, Chef Yuen became Head Baker of the Sofitel Chicago Water Tower. Eventually, he opened his own upscale bakery named La Patisserie P in 2004.

Chef Yuen currently travels as an International Baking/Pastry Consultant. He was a member of the Bread Bakers Guild Team USA 2008 that competed in the Coupe Du Monde de la Boulangerie, at which time Chef Yuen placed first in the Viennoiserie category. He has been a member of Ambassadeurs du Pain since 2009. He was invited to compete as the USA representative at the Viennoiserie category in the first Masters de la Boulangerie in 2010, which he placed second. He was voted as one of the Top Ten Best Bread Bakers in America in 2011.

Currently he is the official Viennoiserie trainer for the German National Baking Academy. He also have taught viennoiserie at French Pastry School in Chicago, Bellouet Conseil in Paris, the Culinary Institute of America in Hyde Park, New Yorkm and many other pastry and baking institutions in 28 countries all over the world.

Chef Peter Yuen will share his secrets for creating breakfast pastries and his special technique that will enable you to become efficient and effective in your preparation of laminated dough. In this hands-on course, Chef Yuen will take you through an assortment of American and Asian baked goods and classic Fremch pastries that will add variety to your current Viennoiseri reprtoire.

What to Wear

All students are required to wear a chef’s jacket, long black or khaki pants, and kitchen-safe shoes (closed-toe, non-skid, no lace-ups).

What will be Provided

All tools, equipment, and ingredients will be provided. Students will receive a full recipe book. Students will receive a certificate upon completion of the class. Lunches are included in the price of the class.


Full payment is required at registration to secure your place in the class. Unless paying by cash or credit card, registration will not be confirmed until payment clears. This is applicable for checks, money orders, and other payment methods.

Cancellation Policy:

A full refund (less a $30 administration fee) will be issued up to 30 days prior to the class start date. No refunds will be issued for cancellations less than 30 days prior to class start. If you choose, you can exchange your refund amount (less the $30 administration fee) for a credit that can be applied to the cost of another class within one year of cancellation. You must call or email if you choose to receive a credit. If the credit does not fully cover the cost of the new class, the student will be responsible for paying the difference.

In the unlikely event of instructor illness or insufficient enrollment, Pastry Arts Academy (PAA) will notify students by phone or email at least 30 business days before the scheduled start of a cancelled class. In this case, students will receive a full refund of their tuition payment, or may apply unused funds toward an alternate class. PAA is not responsible for any hotel or airline fees that may incur in case of a canceled class.

We recommend contacting PAA to confirm enrollment before booking a trip to Salt Lake City.
