Answer this philosophical question for us: what is a meatball? As we’ve traveled the world, we’ve learned that meatballs, which appear almost universally across culinary traditions, refuse to be easily defined. They don’t actually have to be in the shape of balls, as Turkish chefs prove while forming them into flattened fritters and football shapes. They can use any form of meat, from the light chicken of our favorite South Indian meatball to Greek’s gamey lamb version. As it turns out, they don’t actually have to contain any meat at all, as one of our favorite recent recipes is Italian pallotte cacio e ova, which we can’t help but translate to Pecorino. . .meatballs.

In this livestream class with Milk Street’s April Dodd, you’ll make meatballs from India, Turkey and Italy that teach a host of culinary and historical lessons. We’ll tackle whether to sauté aromatics before preparing your meatball mixture (sometimes yes, sometimes no). We’ll talk about if you should use a panade to give your meatballs structure (sometimes yes, sometimes no). And we’ll discuss whether to use a single meat or a combination for the best results (you get the picture). By the end of this class, you’ll have a clearer idea of what a perfect meatball is for you—even if it defies definition.
