Brisket 101

Learn to master brisket on the Big Green Egg with The Coastal Cupboard! In this class, we’ll guide you through the full cook—from fire setup to slice.

Format: Lecture-style and laid-back, with live demonstration, plenty of pitmaster tips, and lots of time for questions. You’ll enjoy generous tastings of the brisket and sides throughout and two complimentary drinks (beer or wine). Plus, you'll have the opportunity for private shopping in the store after the class.

What You'll Learn:

  • Beef Quality & Selection: Grade, marbling, and choosing the right cut.
  • Prep & Trimming: Removing excess fat, prepping for even cooking
  • Smoking Techniques: Fire control on the Big Green Egg, maintaining temps, choosing wood, using a drip pan, wrapping vs. no-wrap
  • Cooking Methods: Exploring methods like low and slow, hot and fast, wrap timing, resting versus not resting, and knowing when it's done as well as cooking on different grills and how to adjust for that.
  • Resting & Slicing: How to rest your brisket properly and how to propertly slice for maximum tenderness.
  • Creative Sides: We'll include a few classic sides with inventive, flavor-forward twists that complement the brisket.

Absolutely. Our instructors guide you step-by-step—no prior experience needed.

Is this class only for people who have Big Green Eggs?

No. Most of the methods and information will be universally applied to any smoker, and we'd be happy to discuss your specific setup and how to adjust the techniques.

What’s included in my ticket?

Everything listed in the overview, plus handouts with recipes and best practices.

Should I dress for indoor or outdoor?

This is an indoor event.

What if we get bad weather?

This class is not weather dependant.

What size are the classes?

We cap at 18 people to keep sessions intimate and interactive .

Do you offer recipes or notes?

Yes! You’ll receive detailed, printed recipes to take notes on which you will be able to take home.

What’s your cancellation policy?

Full refund with 7 days’ notice; no refunds within two weeks of the event. Tickets are transferable, so we encourage you to sell or gift your tickets if you cannot attend.

Can you accommodate dietary restrictions?

The menus are pre-set and planned in advance. Based on the dietary restriction, we may or may not be able to accomodate. Please email info@thecoastalcupboard.com with your dietary requests/questions.

What happens if the class is canceled?

On the rare occasion a class is canceled due to low ticket sales, instructor illness, inclement weather or other uncontrollable factors, a full refund will be given and we will do our best to give 48 hours notice.

Is this event 21+?

This event is open to guests of all ages. However, we may ask for ID and will not serve alcohol to anyone under the age of 21. Please note that if a guest is under age or simply chooses not to drink their beverage - it may not be shared, transferred, or given to another attendee.
