Limited Release, 1944 Parmigiano Reggiano Cracking at The Son of a Butcher
Overview
Our last Parmigiano Reggiano Cracking of the year is a special one! We have the honor of receiving one of 100 wheels produced this year from a limited-release farm just south of Parma. La Villa is a family-owned and operated farm producing some of the world’s most limited-release, traditional Parmigiano Reggianos. Unique and inimitable, 1944 is produced with the milk from two ancient breeds of Parmigiano Reggiano cows: red cows (vacche rosse) and brown cows (alpina bruna), yielding only 100 wheels a year! This organic, heritage cheese is salted with Sale Dolce di Cervia and branded only from April to October, when their cows are fed fresh grass. The name is a memory and tribute to the family's Uncle Tonino, who was born on March 20th, 1944.
Join us at 5:30 pm to view the art of our cheesemongers cracking open a wheel while sharing more stories and history of the cheese, while you sample servings straight from the heart. Available to purchase by the pound, these fresh wedges make for fantastic hostess gifts as well as round out a lovely Italian holiday meal.
