Level 2: Food Traceability & Product Recall Management
This intermediate course equips participants with the knowledge and practical skills to develop, implement and manage effective traceability and product recall systems in food operations. Participants will gain a clear understanding of how to trace products throughout the supply chain — from material procurement and processing to distribution — and learn how to execute an efficient recall protocol in the event of a food safety incident. The course combines theory with practical simulations, including mock recall exercises, to strengthen preparedness and compliance with HACCP and ISO 22000 requirements.
Key Objectives:
- Understand the principles and importance of tracebility in maintaining food safety and quality
- Learn documentation and record-keeping requirements across the supply chain
- Develop effective recall management procedures and response plans to address food safety emergencies
- Build team coordination and communication strategies for recall implementation
- Apply root cause analysis tools such as the 5 Whys, Fishbone Diagram and Mind Mapping
- Simulate a mock recall exercise to test and strengthen recall readiness
