Description:There are some dishes that we’re hesitant to feature at the Milk Street Cooking School for a simple reason: they have such a bad rap. Chicken satay is one such dish. Thailand’s beloved street food—which should combine fragrant, tender chicken with a peanut sauce that’s creamy, earthy and just slightly sweet—too often ends up being a tragic combination of chewy chicken with gloopy, over-sweet peanut sauce. Chariya Khattiyot, author of the new book “Lanna,” is here to set the record straight. Chariya will show you how to realize all of chicken satay’s potential by using an ingeniously simple marinade, then echoing its flavors in a peanut sauce that has all the essential Thai flavors: punchy lime, umami-rich fish sauce, sweet palm sugar and warming chili powder. We’ll pair this protein with a vegetable-forward curry that is Chariya’s mom’s favorite dish. Originally from the south of Thailand, where spicy food is a way of live, it showcases the region’s love for heat, vibrant flavor and fresh vegetables—and illustrates the way that dishes have migrated across the country’s regions. Both dishes beg to be served with a good pot of Thai-style glutinous, or sticky, rice, which Chariya likes to make in—wait for it—the microwave.
