Quick: what are the five elements of a good bowl of ramen? If you don’t know, then you need to join guest teacher Sho Spaeth, author of the new book “Homemade Ramen,” for a class that makes sense of the tangled web of traditions, conventions, trends and opinions that surround this beloved bowl of soup. Sho helpfully divides ramen into component parts, making it approachable and practical to produce in a home kitchen. Our focus in this class is on a variation that uses chicken to make stock, fat and toppings: it’s a no-waste approach that also happens to produce maximum depth of flavor. While your slightly untraditional stock simmers, we’ll make a batch of very traditional alkaline wheat noodles, the one component that is absolutely non-negotiable in a bowl of ramen. A science geek at heart, Sho will take you on a deep dive into the chemistry of a proper ramen noodle and help you understand the difference between instant ramen noodles, homemade ones and restaurant ones. Then, we’ll prepare toppings, an area where you’ll get permission from Sho to adapt and innovate according to your tastes. We wrap up by composing a bowl of ramen so that it looks as good as it tastes.
