Join us in the Teaching Kitchen at Under-Study for a hands-on pastry class led by Pastry Chef, Oliver Phillips. In this two-hour workshop, you’ll learn the craft of rustic apple galettes, working with fresh, locally sourced apples and a versatile blitz puff pastry.
Chef Oliver will guide you through the process of making this approachable French-inspired pastry from scratch. He’ll demonstrate how blitz puff pastry is prepared and laminated, offering professional tips and tricks that bring confidence to your own baking at home. You’ll see how simple techniques transform humble dough into golden, flaky pastry.
Together, we’ll explore the beauty of galettes: their free-form, rustic style and their endless adaptability for both sweet and savory flavors. Each guest will assemble and bake their own apple galette, learning how to layer fruit, fold edges, and finish with that perfectly rustic look. While your galettes bake, Chef Oliver will share insights into the versatility of puff pastry and how these same techniques can be applied far beyond dessert.
As with all Under-Study experiences, the class begins with a welcome glass of Schramsberg Sparkling Wine. You’ll leave with new baking skills, a fresh-baked galette in hand, and the confidence to recreate these rustic pastries in your own kitchen.
