Description:
Holiday entertaining includes casual evenings with friends and formal parties with colleagues. In all instances, we want our guests to feel taken care of; one great way to do that is to feed them elegantly and well. In this livestream class taught by Milk Street’s April Dodd you’ll learn two recipes: one for more casual evenings and one suited for formal occasions (though, in all honestly, they both work well for any event). What ties the two recipes together is a reliance on the flavors and textures of walnuts. Yes, flavors and textures, plural. A walnut can be many things and April will show you how throughout class.

First, April will teach you one of the best dishes we ate in Southern Italy—a deceptively humble dish of spaghetti enrobed in a pesto of garlic, breadcrumbs and walnuts. The deception? It’s a very chic dish made from pantry ingredients. Dust it with finely minced parsley and serve it with a colorful radicchio-endive salad and a side of lemon-zest tossed green beans, and you have a beautiful menu. For dessert the same evening or at another party, April will teach you our French Walnut Tart recipe. To make it, you’ll fill a cookie-like pastry shell with walnut pieces and buttery caramel. You’ll learn to pair walnuts with whole grain flours, why French pastry is kinder to bakers than American pie dough and how to make an easy caramel. April will also show you several tricks to ensure sure that the final tart isn’t cloyingly sweet (the disappointing fate of many nut-caramel desserts). We’ll also share one more favorite walnut recipe, an amenable Parmesan-walnut biscuit perfect for a cheese board or with a glass of sweet wine or dry sherry.

This event has limited spots and you must register in advance via Eventbrite in order to attend. One sign-up covers one device. Payments for Milk Street livestream events are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final.
