Overview
A class on the grains where flavors and aromas come from.
The Raw Materials, Process and Maturation determine the Chemical compounds, esters, oils, etc. all come from one of these three areas. Sugars from the grains, fruity or spicy esters from the yeast, what gets carried over through distillations and cuts, wood sugars and tannins, cellulose breakdown in the wood, flavors imparted from new vs. used oak, etc.
This course focuses on the Raw Materials (Grains) Corn, Wheat, Rye, Barley, etc.
