Railroads recognized very early that dining was a key way to distinguish themselves from competitors. Passengers benefited from each railroad’s effort to offer the best food, best service, and best dining environment. Even the china became a mark of distinction as railroads used unique china patterns to brand the railroad and individual routes. In this presentation we'll explore all that it took for Union Pacific to run their world class dining service.
Lindsey Marolt is the Education Coordinator at the Union Pacific Railroad Museum in Council Bluffs, Iowa. She is originally from St. Louis and holds degrees in history and museum studies.
