One of the many lessons taught in culinary schools, chicken butchery is a key skill for those looking to become proficient home cooks. Chef Clara Park will discuss and demo how to properly break down a chicken and the best way to cook each part. Students will butcher their own chicken, make pan roasted lemon chicken, braised chicken thighs and chicken stock.
