Let’s get into truffle! Houston-based Chef Maricela “Mate” Zorrilla brings her signature French-Mex approach to a special truffle dinner, along with the expertise of local expert “Truffle Lady” Diane Roederer for an evening to savor and celebrate the culinary treasure. Along with exceptional wines and fine company, you’ll learn best practices for incorporating delicate, aromatic truffles into dishes as you taste your way through an incredible menu.

Together, we will enjoy a truffle-filled version of Chef Zorrilla’s beloved “sobremesa” — unhurried moments of good conversation, laughter, food, and wine — one of life’s most enduring gifts.

About Chef Mate Zorrilla

Maricela “Mate” Zorrilla’s culinary voice is shaped by a lifelong fascination with the quiet rituals, stories, and flavors of her upbringing in Mexico, later refined through classical French training in Europe at the École Supérieure de Cuisine - Française Jean Ferrandi in Paris, France, and Basque Culinary Center in San Sebastian, Spain. Her cuisine blends the depth of Mexican ingredients with the precision and technique of French gastronomy, creating a style that is expressive, contemporary, and deeply rooted in cultural memory.


In Mexico City, she led and collaborated on celebrated culinary projects ranging from contemporary Mexican fine dining to French bistro cuisine, high-end catering, and culinary education. Her passion lies in carrying the finest ingredients and original flavors from Mexican markets to discerning international tables, creating dishes that speak to both tradition and evolution.


About Diane Roederer

French native, truffle connoisseur, and specialty food expert Diane Roederer has the cred and reputation that has given her the nickname of “Truffle Lady.” Over the years, Roederer became known among Houston’s culinary professionals as the connection between chefs and tracking down exclusive, hard-to-find ingredients to elevate their menus — like truffles! In 2015, Roederer founded Truffle Masters, an annual truffle celebration and competition between chefs in Houston.

  • Kurobuta Rack of Pork (Mole Almendrado, Foie-Gras Ganache, Black Winter Truffle)

  • Choux au Craquelin (Vanilla Craquelin, Fig-Leaf Crème Pâtissière, Truffled Caramel, White Truffle Crunch)
