The United Kingdom is home to some of the world's great farmstead cheese traditions, including iconic cheeses like Cheddar and Stilton. Other British cheeses, known as Territorials, have equally rich regional histories. Sadly, many of these world-class cheeses are currently at risk of dying out in their traditional forms. But there's hope! A new vanguard of cheesemakers is adopting traditional methods and recipes, alongside stalwart multi-generational cheesemakers who proudly continue to make cheese using the same methods, equipment, and land as their ancestors.
What factors go into making a great cheddar? Why are so many of these cheeses defined by their bright acidity? And how do they achieve such remarkable texture? Join Jeremy for a tasting tour of the British countryside, answering these questions while exploring centuries of cheesemaking expertise alongside upstard innovators. We'll embrace classic beverage pairings, including malty beers, tart cider, and more.Expect to leave with a new appreciation for British cheese as our expert cheesemonger leads you through his favorites and explains why these cheeses are essential to our cheese counter.
