Join us as we host a special class presented by our favorite butchers, Kate Kavanaugh and Josh Curtiss (founders of Western Daughters, in Denver Colorado). In this class, you will learn how to break down an entire bison into primals and then further into the case ready steaks, roasts, and grind that you adore. This class will cover the foundations of butchery, tips and tricks of the trade, as well as inspire you to take more ownership in processing your meat. Both educational and thoughtful, Kate and Josh will discuss the anatomy, physiology, and spirit of the animals on which we consume on a daily basis. This class is designed for anyone curious about butchery or anyone looking to connect deeper and more meaninfully to the animals which nourish our body!

Attendees will leave with 2 pounds of meat and the experience of a lifetime!
