A beginner “how to” for creating the classic Kransekake cake.


Ever wondered what it takes to make this 18th century Scandinavian wreath cake? Want to start a new family tradition? Have a special event coming up that is calling for this celebration cake?


This class will walk through the steps to create a classic Kransekake, the towering cake made with rings of cake that gradually get smaller in size. The class includes both demonstration and participation components. From grinding almonds to the final decorations, attendees will leave with a solid base of knowledge for creating their own masterpieces.


Classic Kransekake made with ground almonds has a chewy texture and keeps well.


This class is taught by Brenda Lewis, who learned from long-time kransekake baker and teacher, Lorraine Jasinski (shown in pictures). After Brenda earned a few Minnesota State Fair blue ribbons on her own, Lorraine “anointed” Brenda to be her successor as a teacher at Norway House. Brenda clearly remembers how overwhelming the process can be when starting out and wants to make it as easy as possible for new bakers.


The class is 2 hours long. It is appropriate for bakers 12 and over.
