Plus, we’ll discuss how kombucha can be a vibrant ingredient in cocktails, adding acidity, complexity, and natural effervescence. Whether you're a cocktail enthusiast, industry professional, or simply curious about fermentation, this session offers fresh inspiration for your palate!


Daniela Alexandra Pedraza is the bar manager at New Society and former lead bartender at Vicia of Take Root Hospitality. With a background in fermentation, she focuses on creating non-alcoholic beverages that highlight seasonal produce, zero-waste techniques, and botanicals. Raised in St. Louis with deep roots in Linares and Monterrey, Mexico, Daniela draws inspiration from both the natural world and her heritage. She sees hospitality as a way to bring people together, always eager to share a drink, a meal, or a moment of comfort.
