Learn the basics of at-home meat curing: how to make salami, traditionally cured bacon, and Italian recipes for salumi. Incl. coffee/meal

Will Hillery of Ecdysis Foundation at Blue Dasher Farm will be leading a workshop on the basics of at-home meat curing! The workshop will be located at the Commerical Kitchen at Good Roots Farm, so you can have hands-on experience curing and tying sausage as well as curing bacon in traditional Italian style! Will apprenticed in Tuscany, Italy, learning traditional Italian butchery and meat curing techniques. He's excited to share these skills with his South Dakota community.

Attendees will take home tied sausage and a sample of pork belly.

The workshop also includes a coffee break with homemade biscotti, as well as a lunch of homecooked soup by Nora D'Antuono and sourdough bread from Allison Lewis, two adiditional Ecdysis folk with amazing cooking and baking skills!
