Wellfleet SPAT, Shellfish Promotion and Tasting, Inc., is a 501(c)(3) non-profit organization that produces and promotes the Wellfleet OysterFest®. The organization is devoted to sustaining Wellfleet's shellfishing and aquaculture industries. The Wellfleet OysterFest began in 2001 as an impromptu event intended for Wellfleet residents to celebrate the bounty of the fall season. It was so successful that organizers committed to hold the event annually. The event has been wildly successful attracting an average of 20,000 visitors to the Cape during the shoulder season.

Even the name honors the oyster. The acronym SPAT is also the name for a newly attached baby oyster. SPAT produces several fundraising events each year proceeds from which support the organization’s educational mission which include a college scholarship program, community grant awards and initiatives to support Wellfleet’s shellfishing and aquaculture industries. To date, SPAT has awarded more than $422,000 between the high school scholarship program and its community grants.
