Course I – Plated Appetizer

Wine: Rosé of Pinot Noir
Notes: Dry, watermelon, strawberry, grapefruit citrus
Dish: Seared Scallop with Watermelon Radish Carpaccio & Citrus Beurre Blanc
Pan-seared scallop set over a thinly sliced watermelon radish “carpaccio,” with microgreens and a drizzle of grapefruit-lime beurre blanc. The freshness and citrus elements lift the Rosé’s strawberry and grapefruit tones.


Course II – Salad

Wine: NEW RELEASE
Dish: Belgian Endive & Little Gem Lettuce with Herbed Goat Cheese, Candied Walnuts, and Apple Cider Vinaigrette
A composed salad of crisp endive and tender greens topped with a quenelle of herbed goat cheese, candied walnuts, and a light apple cider vinaigrette. Elegant, textural, and distinct from previous menus.


Course III – Poultry Entrée

Wine: Chardonnay (oak-aged, buttery, full-bodied)
Dish: Roasted Airline Chicken Breast with Wild Mushroom & Leek Cream Sauce
Served over a bed of herb farro and roasted baby carrots. The wine’s buttery oak aging complements the cream sauce while the roasted vegetables provide balance.


Course IV – Red Meat Entrée

Wine: Malbec (plum, black cherry, black currant, vanilla)
Dish: Grilled Beef Striploin with Plum Demi & Charred Spring Onion
Sliced striploin finished with a reduction of beef stock and stewed plums, paired with garlic-whipped potatoes and charred spring onions. The fruit-driven demi enhances the Malbec’s dark fruit and vanilla tones.


Course V – Dessert

Wine: Bourbon Barrel Red (blackcurrant, cherry, vanilla, bourbon barrel spice)
Dish: Chocolate Bourbon Tart with Vanilla Bean Crème Anglaise & Cherry Compote
A rich chocolate tart infused with bourbon, plated with vanilla bean crème anglaise and a tart cherry compote. The barrel spice and deep fruit of the wine weave seamlessly into the dessert’s chocolate, vanilla, and cherry notes.
