Leafy Cafe's Chef & "Nutritionista" MiMi McGee

MiMi began her love affair with food at an early age when she started a cooking club with some friends on Sunday afternoons. Years later, while attending college, MiMi funded her education through restaurant and hospitality work.

Working with people has always been a passion for MiMi which led to a career in the Hospitality field, working as a Meeting and Events Planner for a 5 star resort property. Suddenly, after experiencing a life changing event when her husband was diagnosed with and died of cancer, MiMi began a quest to find a connection between diet and disease. Returning to school she studied Culinary Arts at Johnson & Wales University then worked as a chef while holding volunteer positions with Meals on Wheels and The Leukemia Society among others, still looking for that perfect healthful cuisine. 

Health and wellness are a way of life for McGee. Competing in marathons & training in various disciplines such as Yoga and Tai Chi led to an investigation of vegetarian food. Working as a personal chef for high profile clients with strict dietary concerns convinced MiMi to choose a dairy-free vegetarian diet for herself.

In 2011, MiMi completed a certificate course in Plant Based Nutrition from Cornell University and began a career as a Food for Life Cooking Instructor teaching people in many locations the path to optimal health through plant-based nutrition.
