Kristina Glinoga

Kristina Glinoga is a Seattle area butcher of sustainably raised meats from good farmers in the Pacific Northwest.  Formerly a professional cook (SpinasseCanlisVolunteer Park Cafe), she cut her teeth and still hones her skills butchering in restaurants (Radiator WhiskeyMatt's in the MarketBateau).    Her butchery is influenced by her time spent traveling around Greece and Italy, learning from neighborhood and countryside butchers and farmers, including fourth generation butcher Andrea Falaschi in Tuscany.  In addition to attending Seattle Culinary Academy, her food and butchery education include multiple whole animal butchery classes such as Mutton Butchery taught by Adam Danforth on Lost Peacock Creamery.  

Butchery 101 by Kristina Glinoga is a roving and ever-evolving butchery service, ranging from classes to dinner parties to pop-up butcher shops.   Some classes are basic, meant to educate consumers on what it takes to get meat to their tables; some classes are advanced, meant for food and hospitality professionals, and meat nerds.  Pop over to the event pages for more details.
