Chef Bruno Breillet is an award winning pastry chef with over 10 years experience teaching individuals and groups the fine art of classic French baking/patisserie making and modern, regional American baking.  He gives classes in both French and English.

Bruno currently lives in the département of Ariège south of Toulouse.  For 5 years, he owned a coffee shop/bakery in Rochester (UK) and before that he was supplying restaurants and coffee shops in London for many years.  In 2011 he won a Master Chef Live/BBC Good Food Show bursary award for his salted butter caramel and his sweet pastry base.  He was a judge for the semi-final of the International Chocolate Awards held in London in May 2012.  Bruno was featured in the January 2013 issue of Delicious magazine and the May 2014 edition of Kent Life.  You can find two of his recipes in the book, Chocolate: Indulge Your Inner Chocoholic.
