Zero Waste Chef's Dinner and Fundraiser for Women in Sustainability at Sullivan Scrap Kitchen (In Person - Denver, CO)

About this event

For years, chefs have been taught to use only certain parts of vegetables and proteins and discard the rest. In the US alone, restaurants generate an estimated 22 to 33 billion pounds of food waste each year. Sullivan Scrap Kitchen is changing that conversation.

Join us on Wednesday, November 10 at 6:00pm for a private 3 course dinner with Sullivan Scrap Kitchen and head Chef Terence Rogers. Chef Terence will prepare a special vegetarian meal for our community to emphasize the ease and possibilities of using all the parts of vegetables to reduce our food waste. Chef Terence will provide an overview of each course and a 20 minute Q&A between the entree and dessert. You can ask your questions like, do you really need to peel carrots? Or what do you do with the leaves from beets? This is an opportunity to get to ask all your food questions with the Chef and eat a delicious dinner with a like-minded community!

This will be a 3 course dinner with your first beverage included (alcohol or non-alcohol, not including water) for only $75! This will be an intimate dinner party and the venue will be reserved for WIS community only. As seats are limited, please register in advance to guarantee your spot for this unique and fun event!

All additional drink purchases will be an additional cost to the attendee.

This event is open to any person interested in sustainability and the environment and all are welcome to attend no matter where you are on your journey!

Menu:

  • Kale and Beet Salad w/ goat cheese, beet balsamic, and pepitas
  • Sage Gnocchi w/ mushrooms, cauliflower, kale pesto and Parmesan
  • Apple Betty w/ buttermilk vanilla ice cream and bourbon syrup

COVID Guidelines:

To safeguard our attendees and family members from the COVID-19 virus, WIS follows all CDC, State, City and venue protocols that are in place at the time of the event. We ask that all attendees follow the required guidelines for both vaccinated and unvaccinated individuals including wearing a mask if you are not vaccinated. We also encourage those to wear masks that feel more comfortable doing so. Regardless of your vaccination status, if you are not feeling well or have come in contact with someone with the COVID-19 virus, please do not attend this event. We appreciate your help in keeping our community and their family members safe during these unprecedented times. In the event of COVID changes, the event will be postponed or cancelled and attendees will be notified immediately. In addition, WIS implements a COVID conscious name tag system for all attendees based on their level of comfort of contact (green = hugs & handshakes, yellow = handshakes & high fives, red = toe taps and air high fives).

About the Venue:

Sullivan Scrap Kitchen is a casual eatery with a focus on reducing food waste. Their mission is to utilize and promote sustainability in food practices, community partnerships, and employees. They collaborate with community resources to decrease food waste and increase our communities’ access to sustainable and delicious nose-to-tail and root to tip cuisine.

They focus on making sure that sustainability is practiced in our food preparation and food preservation. They turn the “scraps” (food items that have small imperfections or are unused) from our TBD Foods fine-dining catering menu into delicious burgers, sandwiches, soups, salad, tacos, and more for a more casual dining experience at Sullivan Scrap Kitchen. This means that they utilize every piece of an ingredient possible so that even the pieces that usually get tossed away (like mushroom stems, lobster shells, vegetable peels, or chicken carcasses) flavor their stocks, get mixed in with proteins, or garnish a plate.

They recognize that a recipe is only as good as the quality of ingredients, so they partner directly with the local farmers, ranchers, wineries, and other purveyors to bring fresh Colorado ingredients to your plate and glass.

Their talented culinary team uses their years of knowledge and fine-dining skills to transform food that would often get thrown away in many fine-dining restaurants into something truly delicious. Their staff promotes a mentoring relationship and shares their knowledge with new team members. They value a collaborative work environment that focuses on retaining staff and helping them grow and develop with them.

About the Chef:

Terence Rogers is the Chef and Owner of Sullivan Scrap Kitchen and the TBD Foods family. Terence has over 9 years of experience working in a variety of kitchens. Terence has slug pizzas in Vermont, created sandwich masterpieces on food trucks in Boston and Denver, and cooked farm-to-table fine-dining meals in Boston, New York, and Denver under award-winning chefs. After serving many wonderful guests in the Boston area, TBD Foods and our chef/owner moved to the Rockies in 2016 continuing with the dream and a passion to bring people together over delicious food. Shortly after moving to Denver, Terence saw an opportunity to use the “scraps” from his fine-dining catering dinners to create tasty sandwiches. He tested his idea for a food waste cafe in 2019, when he started Lil Scrap Kitchen- a once a week sandwich pop-up out of his commissary. After a couple of successful months, Terence found the perfect restaurant location for Sullivan Scrap Kitchen, where his passion for sustainable food practices and delicious meals could grow and flourish.

Women in Sustainability:

Women in Sustainability (WIS) is a nonprofit dedicated to caring for the people that care for the planet by creating community and advocating for all along with providing resources and education in all aspects of sustainability.

WIS intentionally creates a safe space for like-minded and diverse individuals to create purposeful connections.
