ATTENTION: CULINARY PROFESSIONALS AND CULINARY STUDENTS

WISCONSIN BOUNTY

True commitment to great food starts with the first links in the food chain – farmers, producers, and purveyors. Created for culinary students and professionals, this two-day “On the Farm – Wisconsin Bounty” event is your opportunity to build a unique field to table experience, utilizing products from local area farmers and growers under the direction of Madison College Chef, Paul Short, CEC.

This event, designed to provide culinary students and professionals a real-life glimpse of farm methods and practices, while gaining hands-on experience in purchasing foods found locally to build their menus. Participants will gain additional respect for ingredients as they experience the effort involved in growing produce and raising livestock. Products procured will be prepared, and ultimately dined on while students learn about the significance of farming and our local culture of farm-to-table. Participants must supply own transportation.

Event Schedule:

Day 1: Departing from Madison College’s Truax campus, we will travel to pre-identified area farms in search of unique, local ingredients.

Day 2: Our class will gather at the Madison College Farm in Fall River, WI. There we will prepare our Day One purchases for a true Wisconsin bounty of foods creating a field-to-table experience.

Session II:

10:00 a.m. – 4:00 p.m. Mon 7/22 Madison College Truax Campus

10:00 a.m. – 4:00 p.m. Tue 7/23 Madison College Farm, Fall River, WI

Cost per Student: $250.00 for 2-day Event/Session
