Description

Winter squash are a great source of Vitamins A & C, potassium and fiber, especially soluble fiber that helps regulate blood sugar and cholesterol levels. Herbs and spices can transform winter squash favorites such as butternut squash into simple and delicious vegetable dishes. In this class, participants will prepare this seasonal vegetable with flavors from around the world – from Mediterranean to Moroccan. We will also show how you can use the leftovers to make breakfast, lunch or dinner, with a busy schedule in mind. The class is led by Registered Dietitian Nutritionist Kathleen Mathis of Reimagining Nutrition, who will highlight how these dishes can contribute to your health. We will wrap up the class with a chance to sample and enjoy all of the dishes, featuring heart healthy fats and low sodium, with recipes and nutrition facts to take home.
