Whether you associate chicken with dry, bland childhood dinners or already love it but are in a rut with your recipes, let us help you transform the workaday bird into two extraordinary meals. In this 75-minute livestream class taught by Milk Street Cooking School’s Rosemary Gill, we’ll make Green Chili and Herb Roasted Chicken and Chicken Noodle Soup with Turmeric and Dill, two herb-forward recipes perfect for this winter-spring cusp season. To make the roast chicken, we first create a herb-and-spice compound butter to slather under the skin of a whole bird. The butter and our method for applying it lend the meat intense flavor unbeatable by any liquid marinade bath or salt rub alone. The butter itself is delicious and we’ll talk about other ways to use it, as well. Once the whole bird is in the oven we’ll turn to chicken parts and make a weeknight chicken soup that tastes like it simmered for hours but in fact only takes 15 minutes to cook once the knife work is complete. And you won’t believe it’s made with boneless, skinless chicken breast and store-bought broth, either. Chicken breast is a cut that is too often dry and stringy, but it becomes juicy and flavorful in admittedly bland store-bought broth that we transform with sweet root vegetables and ample bright dill.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to class (or within 48 hours of registering, if you sign up less than a week in advance), you will receive an email with the ingredients, equipment and prep you'll need to cook along with us, if you choose.
After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.
Payments for Milk Street live stream classes are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time. In the case of cancellation by the event organizer, all paid tickets will be fully refunded.
