Course 1 - G.L.T: Guanciale (Pig Jowl), Microgreens, Heirloom tomato and garlic aioli on a butter brioche slider roll

Course 2 - Rabbit: Braised and seared rabbit tenderloin served atop a parmesan risotto

Course 3 - Duck: Seared Duck Breast, served with a potato pure, organic quinoa with a pomegranate reduction

Course 4 - Alpaca: Alpaca Bolognese, slowed cooked in red wine with carrot celery and onion served over tagliatelle pasta

Course 5 - Blood Orange Panna Cotta: Blood orange sweet cream infused mousse
