The 2019 WGBY Wine Lovers Dinner (https://wgby.org/dinner) features a seven-course menu carefully designed by guest chef Sanford D'Amato of Good Stock Farm, Hatfield. Each course is served with fine wines expertly paired by Michael Quinlan of Table & Vine.

The Edible Footprint of the Pioneer Valley

Guest chef Sanford D'Amato has designed a menu inspired by the cultures of those who formed and found themselves a part of today’s Pioneer Valley. For D'Amato, this theme squares with his philosophy and style of food, which he began labeling as "Contemporary Ethnic" some 35 years ago.

"The immigrants, when they moved to the Pioneer Valley, would have to adapt the food that they knew to the products of this country," D'Amato says. "Not always having the exact ingredients that they grew up with, their food changed into a new style that was at times not recognizable to visiting relatives of their country. Yet, all it took was their first mouthful for it to become completely recognizable as it had the tastes, aromas, techniques and flavor memories of their specific country. This style of food, contemporary ethnic, is the blueprint for modern American cuisine."

D'Amato will be on hand at the dinner to help explain his methodologies and ideas. Meanwhile, his menu will be carefully executed by Chef Bill Rounds and his talented culinary team.

Amid seven courses of mouth-watering food will be wines expertly paired by Table & Vine's Michael Quinlan. Diners will learn about each pairing, and discovered the ways wine and food marry on the palate.

WHAT'S ON THE MENU?

  • First Course (Italy) — Eggplant Caponata with Toasted Pignoli and Lamb Ragu Arancini with Smoked Tomato and Mint Emulsion
  • Second Course (Native American) — Fragrant Butternut Squash Soup with Dried Cranberries, Sumac and Pecans
  • Third Course (Mexico) — Dungeness Crab Ceviche with Serrano Ham and Candied Serrano Peppers and Orange-Garlic Vinaigrette
  • Fourth Course/Intermezzo (Latin America) — Mango Sorbet with Grilled Pineapple Broth
  • Fifth Course (Asia) — Asian-Barbequed Striploin with Grilled Baby Bok Choy and Vietnamese Slaw
  • Sixth Course (England) — Griddled Pear and Stilton Croûte with Caramelized Onions, Walnuts and Walnut Oil
  • Seventh Course (Poland) — Lemon Poppy Seed Cheese Torte with Tart Cherry Sauce

HOW MUCH DRINKING WILL THERE BE?

WGBY encourages responsible drinking, and only adults (21+ years of age) are allowed. As each course of the WGBY Wine Lovers Dinner will be paired with a fine wine, you would be wise to pace yourself. The Yellow Cab taxi company (413-739-9999) will be operating independently each night of Wine Weekend.
