About this Event

The Village Council of Wellington and Buffalo Trace welcome you back for the annual Wellington Bacon & Bourbon Fest. Held on the grounds surrounding the new Village of Wellington Community Center and amphitheater, the free event is scheduled for March 22 - 23, 2019. The Wellington Bacon & Bourbon Fest celebrates the most loved food in the universe – Bacon and the quintessential American liquor, Bourbon.

We are very excited to be featured on the Cooking Channel’s “Carnival Eats”. Host Noah Cappe joined us at the event our first year in the Wellington location and will appear on August 26th episode at 9:00 pm.

The two-day event features great live music, artist & crafters, an eclectic menu of bacon infused culinary delights and a collection of over 40 bourbons and whiskeys for your tasting pleasure. The Fest also offers participants exclusive bacon and bourbon pairing seminars including exclusive Pappy Van Winkle tastings. South Florida’s foremost Bourbon experts share the distiller’s art and patient techniques in the seminars and tastings. All intended to enhance your knowledge and pleasure of American made Bourbon and whiskey. And, we will throw an Irish whiskey or rye into the mix for historical purposes. For those of you who we cannot be convinced to partake in Bourbon, we will have a few fine wines and ice-cold beer too.

Our menu of bacon and pork related dishes will include the sublime Forever Roasted Bourbon BBQ Pork & Bacon Sandwich to the insane Bacon Bar featuring chocolate covered and caramel nut dipped bacon and bacon desserts. Menu items developed by local chefs explore the boundaries of New American Cuisine and the Farm to Table movement to good old-fashioned comfort foods, just like Mom used to make!

We’ll have plenty of backyard games, corn hole, Jenga, checkers and the infamous pig races! It’s an intimate sitting like a backyard BBQ!

Pappy Van Winkle 10yr, 12yr, 15yr, 20yr, 23yr

10 year - This wonderful bourbon is bottled as close to barrel proof as possible. We add just a splash of our Kentucky limestone well-water when we empty the barrels for bottling. Thus, this whiskey is as smooth as any you will find.

See a rich, copper color. Smell enticingly sweet, spicy, caramel-nut-fudge aromas. Enjoy a fruity, medium-to full-bodied palate with intense dried fruit and toasted nuts notes. Each sip finishes with a very long, bold wave of peppery brown spices, floral honey and charred barrel flavors that balance the weight of the alcohol. It’s a big, bold, aged bourbon that has great balance for its high proof and flavor.

12 year - See a brilliant, amber-orange color. Smell luscious, complex toffee. Taste a round, supple entry, leading to a dry, expansive, medium body. Enjoy notes of caramel, nuts, and brown spices with a lengthy, enveloping finish. It’s an outrageously smooth and decadent bourbon.

15 year - See a hazy, copper color. Taste a rich, supple entry, leading to a decadent, huge, full-bodied palate with intense caramel, toffee and peppery brown spice flavors. Then, enjoy a finish with an extreme, long, complex, evolving fade of spice and wood notes. Experts deem it a seductive, exotic and virtually flawless bourbon.

20 year - See a dark amber and dark orange cast. This full bodied bourbon is reminiscent of oiled leather, smoke, minerals, coffee and cigar boxes. Take in the endless ranges of aromatics and flavors. Enjoy the infinite finish.

23 year - See a deep amber red. Taste the various hints of caramel, ripe apples, cherries, oak wood and tobacco with a hint of chocolate. This bourbon finishes with a long-lasting and pleasant taste. Starts with a lot of wood flavors but leads to a nice sweet caramel finish.

Saturday, March 23rd

12 pm ($55) BUFFALO TRACE EXPERIENCE – 5 varieties (Limit 60)

Buffalo Trace White Dog Corn, Buffalo Trace, E.H. Taylor Small Batch, E.H. Taylor Single Barrel, Eagle Rare

Buffalo Trace White Dog - It's 100% grain forward and is alcohol in its purest form before the barrel starts to work its magic. The white dog that is used to make Buffalo Trace is a corn-heavy mash bill with malty notes and one of the few white dogs on the market that is not watered down to 80-90 proof before bottling.

Buffalo Trace - The whiskey is comprised of a low-rye mashbill providing for a softer, sweeter expression and is bottled at 90 proof.

E.H. Taylor Small Batch - As the name indicates, this is a small batch whiskey comprised of selected whiskey barrels which were aged in Warehouse C. This warehouse was constructed by Colonel E.H. Taylor Jr in 1881. This bourbon is also a bonded whiskey which means that the bourbon was distilled in one season, aged for at least 4 years and bottled at 50% ABV.

E.H. Taylor Single Batch - This single barrel bourbon is aged for 11 years and 7 months in Warehouse C, which was built by Taylor in 1881, and is bottled-in-bond at 100 proof.

Eagle Rare - Straight Bourbon is one of the flagship products of the Buffalo Trace collection. It is made from 10 year old bourbon aged at the Kentucky distillery. The barrels are hand selected for quality and consistency before bottling.

1792 Small Batch, 1792 Single Barrel, 1792 High Rye, 1792 Sweet Wheat, 1792 Full Proof

1792 Small Batch - Aged for eight years, this Bourbon has aromas of corn, caramel and shortbread. Classic balance of spice and oak leads to a long dry finish.

1792 Single Barrel - This Superior bourbon has flavors of butterscotch and caramel notes, delicately balanced with hints of fruit and toffee. The body is rich and lingers on the tongue for a delicate and pleasant finish.

1792 High Rye - aromas of corn, caramel and shortbread. Classic balance of spice and oak leads to a long dry finish.

1792 Sweet Wheat - A Well balanced bourbon with delicate body. Notes of vanilla and caramel are complimented by a touch of white oak tannins. This is further mingled with dried fruit to deliver a richly smooth flavor.

1792 Full Proof - Strong and full of flavor, this bold bourbon boasts an incredible deep and smoky taste, superbly balanced with sweet vanilla and notes of caramel. A distinctively rich flavor comes from bottling at its original 125 barrel entry proof.

E.H. Taylor Single Batch - Often considered the father of the modern whiskey industry in the United States, Edmund Haynes Taylor, Jr., fought for the Bottled-In-Bond act of 1897. At the close of the American Civil War he purchased what is now the Buffalo Trace Distillery. This single barrel bourbon is aged for 11 years and 7 months in Warehouse C, which was built by Taylor in 1881, and is bottled-in-bond at 100 proof.

Elmer T. Lee - Named after Master Distiller Emeritus Elmer T. Lee, this whiskey is hand selected and bottled to the taste and standards of Elmer T. Lee himself. Perfectly balanced and rich. The nose brings notes of clove, vanilla, and old leather. The flavor balances fruit, honey and vanilla with a light spiciness. A long and warm finish.

Blantons - A deep, satisfying nose of nutmeg and spices. Powerful dry vanilla notes in harmony with hints of honey amid strong caramel and corn. A medium finish composed of returning corn and nutmeg flavors.

Stagg JR - Rich, sweet, chocolate and brown sugar flavors mingle in perfect balance with the bold rye spiciness. The boundless finish lingers with hints of cherries, cloves and smokiness.
