If you’re craving nourishing, seasonal produce but don’t quite know how to tackle those large, wobbly squashes/pumpkins/root vegetables, then this is the class for you! Tonight is all about working with the autumn bounty, and turning out tasty, wholesome dishes that will help inspire the upcoming season of hearty soups and stews. Let chef-instructor/wellness coach Juan Pablo Chavez show you how to safely and efficiently peel, cut, and prepare various squashes, and learn how to properly season and pair these superfoods with a delicious lineup of supporting ingredients.
On the Menu: Creamy Kabocha Squash Soup; Butternut Squash Risotto; Roasted Acorn Squash with Pumpkin-Cilantro Vinaigrette; Sweet Potato Cookies.
