In this class, we’ll walk you step-by-step through preparing Reverse-Seared Filets and beautifully cooked Lobster Tails on the Big Green Egg. You’ll learn how to trim and prep the steaks for even cooking, how to season thoughtfully, and how to manage the low-and-slow phase before finishing with a perfect sear. For the lobster, we’ll cover the fundamentals of handling and cleaning tails, along with multiple prep options—splitting, halving, or lifting the meat for different presentations—and how to cook them confidently without overdoing it. Together, these techniques form the foundation of a classic, elegant Valentine’s dinner you can replicate at home.

We’ll also prepare a seasonal side and a simple, elegant dessert to round out the meal (specific dishes may vary). The focus throughout is on the how and why behind each step, so you can confidently recreate the entire menu on Valentine’s Day.
