Description

Join the UNH department of Agriculture, Nutrition, and Food Systems for an evening with award winning Chef Evan Mallett as part of our 2nd session for the Food & Sustainability outreach series. This event is free and open to the public, but registration is required as space is limited.

Chef Mallett, the owner and executive chef of The Black Trumpet in Portsmouth, has been exploring the topic of a sustainable food system for many years. Along with being named a James Beard semi-finalist on five occasions, he is on the board of the Heirloom Harvest Project, which joins farmers, chefs and educators together to restore a food system native to the area. He is also an active member of Slow Food Seacoast.

This evening's program will include a talk by Chef Mallett on how we can work towards preventing food waste, as well as a small taste of what he can prepare using ingredients we often don't think of or might throw in the trash. The prepared samples will include at least one vegetarian sample.

Please note, while this event will include 2-3 small appetizers to accompany the lecture, you may want to visit the nearby UNH Holloway dining hall or one of the many restaurants in Durham prior to the session.
