Understanding Salt & Acid

Heat isn’t the only way to cook and cure food! Join us as we look at how salt and acid, too ancient ingredients, work with different food preparation techniques. The class will explore the different types of salts and acids commonly use in the kitchen today. We’ll cure salmon, make ceviche, quick pickle some vegetables, understand making vinegar at home, work with olives and capers and pan fry Baltimore’s favorite dish made with salted fish – the Coddie.
