‘Under the Sea’ — A Southern Smoke Benefit Chef’s Dinner

About this Event

Join us for our third Chef Collaboration dinner. Executive Chef Janelle Reynolds (Rosedale Kitchen and Bar) will be joined by two exciting chefs from acclaimed Austin restaurant Uchiko. The chefs, and life partners, Angela (sushi) and Whitney Majko (pastry) will, together with Janelle create a 4-course collaboration dinner featuring local produce from Johnson’s Backyard Garden and seafood from Minamoto Seafood. Our guest cocktail expert, Curtis Hansford (Bar Manager at Swift’s Attic) will provide special craft cocktail pairings, with even more local ingredients, to go with the amazing dishes.

Seating will be limited to our spacious patio and socially-distanced indoor dining room with live acoustic music by Carly Jo Jackson.

A portion of ticket proceeds will benefit Southern Smoke, a nonprofit foundation created by Chef Chris Shepherd (Underbelly), for the Food & Beverage Industry, in times of crisis.

Tickets: $65 per person (includes welcome cocktail)

ADD a Cocktail Pairing: $30

Does not include gratuity.

Sunday, December 6th, 6:00 pm – 7:30 pm — reservations available -- welcome cocktail upon arrival, followed by dinner – beer, wine, and cocktails available a la carte.

‘Under the Sea’ Menu:

1st course (choose one)

Scallop ceviche

Rock shrimp or Lion’s Mane Tempura

Sashimi: Hamachi, grapefruit, fennel

2nd course (choose one)

Crunchy fried rice & king crab: pickled watermelon radish, smoked ponzu aioli, candied ginger, chili oil

Crispy mushroom congee: onsen egg, chili oil

3rd course (choose one)

Black cod “tom kha”: radish, coconut, tomato, bok choy, mushroom, lemongrass

Grilled ribeye: oyster mushroom, red dulce seaweed, garlic-soy jus

Vegetable Medley “tom kha”: radish, coconut, tomato, bok choy, mushroom, lemongrass

4th course (choose one)

Nori pavlova: mango passionfruit granita, yuzu kosho

Flourless chocolate cake, caramel & sea salt mousse, pecans

Cocktail Pairing:

1st course – The GBD – blood orange ice ball topped with Mi Campo tequila, lime, and ginger beer.

2nd course – fresno chili oil Sazerac – High West Double Rye, Peychauds bitters, simple syrup, absinthe rinse, with lemon peel.

3rd – Texas sour with cabernet caviar – Western Son blueberry vodka, egg white, lemon juice, simple syrup, and cabernet pearls.

4th – French 75 – Western Son Barrel aged gin, sparkling, lemon juice, simple syrup, and mango passionfruit granita.

As a seafood lover from Florida, it seemed only fitting that Chef Angela Majko helped to open Austin’s award-winning Uchiko restaurant in 2010. Chef Angela Majko quickly honed her skills and became a top female Sushi Chef in the North American region, earning her a place on the Food Network “Chopped” series and an Eater “Young Guns” nomination.

At a young age, Chef Whitney Majko developed a passion for all things pastry while learning to bake cookies in the kitchen with her great grandmother. As a world traveler, she learned to think ‘outside the box’ while adding worldly nuances to her sweet creations. Pastry Chef Whitney Majko has been an apprentice under the award-winning Ariana Quant at Uchiko since 2018.
