A haute cuisine occasion in support of a worthy cause!
This is a Ukraine food aid fundraising banquet, in collaboration with the Ukrainian Cultural Center of Victoria, Camosun College Culinary School as well as local Chefs and food and beverage providers of all stripes.
We are raising funds for World Central Kitchen- a food aid charity run by celebrity chef Jose Andres, who's organization is in Ukraine and supporting those displaced with food and clean water. The event, hosted at Camosun culinary building- features the sophisticated seasonal food of Ukraine, so bring an appetite and partake in the silent auction or enjoy some live music from the comfort of our long tables set up for an authentic Ukrainian banquet atmosphere. Limited capacity, 100 tickets available. Admission is $100 per person, and includes a variety of amazing traditional foods you'll likely never have seen before in this 4 course family style format, along with champagne reception lounge with canapes. (No cabbage rolls or perogies we promise).
The menu features carefully selected traditional items from the various oblasts (provinces) of Ukraine, alongside a bar stocked with excellently paired beverages common to the dining traditions of those places. Together with a bit of the culinary history and anthropology through a quick presentation of each dish, you'll get a chance to truly know the culture, as well as from musical performances of the band Vostok, Francis Hope, Andreas Adamopolous among others.
The Menu (plus maybe a few surprises)
Course 0 (reception, Champaign and bites in the auction lounge)
-Pork Salo, Fol Epi bread
-Meat Stuffed Potato Pancakes (Draniki)
-Solinya (artisan pickles) medley (vegetarian)
-Vegetable caviar with cracker and oven reduced tomato (vegetarian)
-Salmon caviar with Ukrainian rye toast, crème fraiche and dill
-Petite Verenky bite with roasted garlic, soft farm cheese on serving spoon
Course 1 soup (main dining hall, long tables)
-Carpathian Style Wild Mushroom Soup (vegetarian)
-Artisanal Poltava Oblast Borscht
Course 2 salad
--Tossed cabbage salad, sunflower-dill vinaigrette, bacon, boiled egg, pine nut, microgreens
-Tomato cucumber, onion and macedonian sheep feta, beet flower (vegetarian)
Course 3 mains
-Pistachio crusted Chicken Kiev, tomato Adjika , roast squash, herbed couscous
-Steelhead a la Mariupol, carrot leek & beet bed, white wine gastrique
-Oyster Mushroom parcel with winter root vegetable stack, Zaporizhzhia style honey onion sauce (lukovey Vzhar)
Course 4 dessert
-Lviv Syrniki (cheese pancakes) with sour cherry compote
-Kiev Cake (hazelnut chocolate torte)
-Rogalich pastry with poppy seed
